In this article it discusses the price of how far some of our food can travel to get to us. It also talks about the importance of shopping local which is why Ten Rivers support local farms. Harry MacCormack, board member at Ten Rivers Food Web, elaborates that TRFW research shows that even in the most aware people, like in Corvallis and Eugene, only around 5% of food is local. Outside those two university towns, stats continue to show less that 2% of food is local. All the rest has various levels of carbon footprint, not that most of the local doesn't have any. Shipping, warehousing, restaurant and retail presentations all involve time factors that affect nutritional quality, differently, depending on product. As does any level of processing, usually done with high heat negatively affecting vitamins, trace minerals, and in some cases minerals in the final product.
